For sashimi, we purchase fresh fish caught that morning directly from Higashi Awa Fisheries Cooperative in Minami Boso, plus fresh fish selected by experts at Yamahachi, the largest wholesaler in Toyosu.The oden, made with a combination of first-grade dashi and chicken stock, is so delicious you'll want to drink up the soup.The meat is made from Chiba Prefecture's brand pork, "Margaret Pork," and is cooked at low temperature to keep it moist.Please enjoy the banquet course that is unique to Shinmachi, which is particular about the ingredients it serves.The photograph is an image
