For sashimi, we purchase fresh fish caught that morning directly from Higashi Awa Fisheries Cooperative in Minami Boso, plus fresh fish selected by experts at Yamahachi, the largest wholesaler in Toyosu.The oden, made with a combination of first-grade dashi and chicken stock, is so delicious you'll want to drink up the soup.The many dishes made with vegetables delivered directly from contracted farmers are absolutely delicious.Please enjoy the banquet course that is unique to Shinmachi, which is particular about the ingredients it serves.The photograph is an image
